It is generally a very good idea to run the update tool to ensure that your system has all the latest patches installed. The main problem which most clients will have is if they are on dial up, this update process will take ages, as the updates are normally quite large.

If you are lucky enough to have a Broadband connection, then it is advisable to run the updates as and when they become available. If you have a new CentOS system, you can be assured that all updates will be downloaded from a local mirror site hosted at a local ISP.

Other versions of Linux will pull their updates from international sites. Please bear this in mind if you are worried about over using your bandwidth allocation.
